“That’s It?” Healthy Chicken in a Roaster #SandersonFarms

Tell me all about your yummy Sanderson Farms Roasted Chicken recipe – I’m all ears!

Having a lot of animals (presently a dozen) to feed and take care of doesn’t leave me with a lot time to try new recipes.

The Viking is a big athletic guy and LOVES eating Sanderson Farms chicken almost on a daily basis. I have a small oven and I needed a way to make enough for a guy who routinely eats his dinner on a turkey platter. I was about to give up when my friend Blogomomma suggested getting a roaster. I figured it was worth a try, so I bought a 22-quart roaster oven. Thanks, Blogomomma!

Whole Roasting Chicken

I started with a fresh Sanderson Farms Roasting Chicken and preheated the roaster according to directions – 350 degrees.

In a bowl I combined:

  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 2 large cloves of garlic, minced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • dash of onion powder

After mixing ingredients well, I spread it evenly on chicken and placed it on the rack that came with the roaster. I then tossed 1 pear cut in quarters, 1 onion cut in quarters, and a handful of whole white mushrooms in the bottom of roaster along with about 1/2 cup of chicken stock.

I roasted chicken for about 1 hour and 15 mins (according to weight and roaster directions)
