Can a recipe be both “hearty” AND “healthy”?

I say yes!

I’ve noticed as the tempertures drop, my need to use a crockpot rises. This is much to the delight of The Viking.  But many crockpot recipes seem to have a few common ingredients that boot them out of the healthy recipe category — like a block of cheese and loads of salt. Even though salt and cheese taste super yummy to many of us humans, consumed in excess (or typical crockpot recipe amounts) they aren’t very good for us.


So how can we have healthy and hearty all in one crockpot?

Thanks to Sanderson Farms (the sponsors of this post) I was happy to discover a crockpot meal that was a 10 on The Viking scale of deliciousness (yes, he has a scale)  and surprise! Healthy!

Healthy ingredients for Crockpot Jambalaya

**Disclaimer: Although the original recipe says creole seasoning, The Viking loves THIS kind in the photo below. But there are healthier alternatives. The great thing is you can decide what’s best for you.

To start off healthy, I used Sanderson Farms boneless skinless breast fillets that are 99% fat-free

Then I picked

  • the kind of sausage we like
  • creole seasoning
  • canned organic diced tomatoes
  • organic chicken stock
  • organic veggies
  • a brown rice and quinoa mix

This recipe was so easy to make, it took just a few minutes to prep.

I’ll be making it again soon for an upcoming party. It was the perfect comfort food.

While I’m on a crockpot-kick, the next healthy recipe I’m trying is Mexican Style Chicken Stew!
