If there’s one thing I never feel I have enough of, it’s time. As more time passes, I’m more aware of how precious time is and how little we have of it.

This means I want to avoid spending lots of time in the kitchen. Especially in the summertime when a hot oven makes me want to run outside and hose myself down.

But I do still want to make something delicious and healthy. I needed to find a way to make a meal with a minimum amount of time-suck.

This brings me to the Kabob.

It’s so simple I almost (not really) feel guilty. Kabobs are all about the prep time. Which can easily be done the night before and the task easily delegated. That means the kids can help. I just love the idea of taking fresh Sanderson Farms chicken, a variety of veggies and fruit, adding whatever seasoning I love, and tossing it all on the grill. Quick, easy, healthy, and no hot oven!

Sometimes I think we assume healthy eating is complicated, but I find healthy eating allows me the time (and energy) to spend more time doing the things I love.
